Why You’ll Love This Recipe

  • 31 g of protein per plate from a pound of shrimp.
  • Garlic and lemon sauce with just 1 tablespoon of butter for four servings.
  • The shrimp cook in about 4 minutes, so dinner is quick.
  • A full 60 g (2.1 oz) of dry linguine per person.

Ingredients

Plate of shrimp scampi with linguine, lemon and parsley
  • 8½ oz (240 g) linguine
  • 1 lb (450 g) raw shrimp, peeled and deveined
  • 1 tablespoon (14 g) butter
  • 1 teaspoon olive oil
  • 4 garlic cloves, minced
  • ½ cup (120 ml) dry white wine
  • 2 tablespoons (30 ml) lemon juice
  • ¼ teaspoon red pepper flakes
  • ¼ cup (10 g) chopped fresh parsley
  • ½ teaspoon salt and ¼ teaspoon black pepper

How to Make It

  1. Cook the linguine in salted water until al dente. Scoop out ½ cup (120 ml) of pasta water, then drain.
  2. Pat the shrimp dry with paper towels and season with half of the salt and pepper.
  3. Heat the butter and olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook for 30 seconds, without letting the garlic brown.
  4. Add the shrimp in a single layer and cook for 1½ to 2 minutes per side, until pink. Move them to a plate.
  5. Pour the wine and lemon juice into the skillet and simmer for 2 minutes, until reduced by about half.
  6. Add the linguine and ¼ cup (60 ml) of the pasta water and toss for 1 minute. Return the shrimp, add the parsley and the rest of the salt and pepper, and toss. Add more pasta water if it looks dry.

Tips & Substitutions

Bowl of garlic shrimp and linguine

Dry the shrimp well. Wet shrimp steam instead of sear and end up pale and rubbery.

Do not overcook them. Shrimp curled into a loose C are done. A tight O means they went too far.

Use the pasta water. It turns the small amount of fat into a sauce that coats the linguine.

No wine? Use chicken broth with an extra squeeze of lemon. It saves about 10 calories per serving.

How to Make It More Filling

Toss 2 cups (60 g) of baby spinach into the skillet with the pasta. It wilts in a minute and adds only about 4 calories per serving. Zucchini ribbons work the same way.

Storage

Shrimp scampi is best fresh. Leftovers keep in the fridge for up to 2 days.

Reheat gently in a skillet over low heat with a splash of water. High heat turns the shrimp rubbery, and this dish does not freeze well.

Frequently Asked Questions

Can I use frozen shrimp?

Yes. Thaw them in a bowl of cold water for about 10 minutes, then dry them very well before cooking.

What can I use instead of wine?

Chicken broth with an extra tablespoon of lemon juice works well.

Can I use whole wheat linguine?

Yes. The calories stay almost the same and you get more fiber.

Can I make it ahead?

It is better fresh. If you must, cook the pasta ahead and make the shrimp just before eating.
